贵阳市中年知识分子膳食营养状况分析A Survey of Diets and Nutritional Status of Middle-Age Intellectuals in Guiyang

摘要(Abstract):
采用整群随机抽样方法 ,对贵阳市 52 4名 4 0~ 60岁的中年知识分子进行膳食营养状况调查。结果表明 :受试者的热能、维生素A、维生素B2 、Ca等多种营养素摄入不足 ,每人每日平均摄入热量占供给标准的 81 66% ,而Ca的摄入仅达 59 38%RDA。蛋白质、脂肪和碳水化合物的生热比分别为 14 71% ,2 6 79% ,58 50 % ,优质蛋白占总蛋白的 50 0 2 % ;动物脂肪占总脂肪的51 11% ;膳食铁的 72 54 %来源于植物铁 ;计算体质指数 (BMI)表明肥胖发生率较全国低 ;生化检验显示男性贫血患病率为 8 3 % ,女性为 2 1 9%。由此可见 ,贵阳市中年知识分子某些营养素的摄入还不足 ,膳食结构亦不合理 ,应进行营养指导提出改进措施 ,以改善他们的营养状况和健康状况
We investigated the nutritional level of 524 intellectuals at age 40-60. The results showed that intake of energy, protein, VA, VB 2, calcium were 81 66%,99 57%,75 55%,70 83%,59 38% of Chinese RDA respectively.These indicated the intakes of energy, VA, VB2, Ca were insufficient. Protein provided 14.71%, fat 26.79%, carbohydrate 58.5% of total energy intake. The consumption of cereal and vegetabls was obvious inadequate. 72.54% of iron originated from vegetal sources. The incidence of anemia was 8.3% in men and 21.9% in wonen. This indicated the dietary pattern of middle-age intellectuals was not rational. They should increase physical activities to promote the intake of staple food and often select milk, soybean and vegetables to supply VB 2 and calcium.
