马缨杜鹃花红色素安全性及稳定性的研究

摘要(Abstract):

从杜鹃花科(Ericaceae)马缨杜鹃(RhododendrondelavagiFanch)花中提取天然红色素,对该色素提取液进行了一、二阶段较系统的安全性研究,同时进行了降解度、氧化还原性、热稳定性、V-C因素及pH值对吸光度值的影响等稳定性的研究。结果所示LD50>10g/kg体重,属实际无毒范围。Ames、PCE微核和小鼠精子畸形等试验均为阴性。表明红色素性质优良、食用安全,有较好的开发利用价值。
The studied natural red pigment is extracted from Rhododendron delavagi Fanch,which is mainty distributed in the west of Guizhou province.It grows widely with sharp red flowers and it is one of the plants with great amount of product in Guizhou.Its safety and stability are firstly understood for developing and expoiting it proerly.Therefore we investigated the extract in the aspert of its first and second stage of systemic safety.The influences of its solubility,oxidation and reduction,thermostability,VC and pH on its spectrum absorption were studied simultaneously.The results showed that it can be classified into the cataloque of nontoicity dut to its high LD50(>10 g/kgbw).Negative Ames test,PCE micronuclear test,and mice sperm abrreation test were obtained.These results reveal that the natural red pigment,extracted from the plant Rhododendron delavagi,is of good quality and safety for food with perspeat value for development and expoitation.
