贵州省某食用白酒中微量成分的研究

摘要(Abstract):

目的:对贵州省某食用白酒微量成分及香气进行分析。方法:采用紫外分光光度法、火焰原子吸收分光光度法、高效液相色谱法、GC/MS(气质谱联用仪)测定该白酒中维生素、金属元素、氨基酸和酸类酯类的含量。结果:该白酒中至少含有8种维生素,9种金属元素,7种主要氨基酸和100多种酯类酸类等微量成分,其中维生素B12、维生素E、钙、谷氨酸、苯丙氨酸、丁酸、己酸、乳酸的含量较为丰富。结论:该白酒中含有丰富的维生素、金属元素、氨基酸和酯类酸类。
Objective: To investigate the micro-constituents of a certain brand of liquor in Guizhou.Methods: Ultraviolet spectrophotometry,flame atomic absorption spectrometry,high performance liquid chromatography,and gas chromatography-mass spectrometer were used to determine the contents of vitamins,metal elements,amino acids and lipids. Results: The result indicated at least eight types of vitamins,nine metal elements,seven amino acids,and more than hundred aroma contents existed in the wine. Among them,it was rich in vitamin B12,E,calcium,glutamic acid,phenylalanine,butyric acid,caproic acid,lactic acid. Conclusion: The liquor contains rich vitamins,metal elements,amino acids and esters,acids.
