三种壳聚糖涂膜剂的抑菌效果及对猕猴桃的防腐保鲜作用

摘要(Abstract):

目的:寻找对猕猴桃有较好保鲜效果的壳聚糖涂膜剂配方。方法:以2%的柠檬酸为溶剂配制3种壳聚糖(CTS)涂膜剂(T),T1为CTS加苯甲酸钠加柠檬酸,T2为CTS加乳酸钙加柠檬酸,T3为CTS加柠檬酸;用3种CTS涂膜剂涂膜猕猴桃,观察果实的失重率及腐烂指数,同时观察3种涂膜剂的抑菌活性。结果:3种涂膜剂均有一定的抑菌作用,其中涂膜剂T1、T2的抑菌效果比涂膜剂T3的抑菌效果好,但差异不具有统计学意义;3种涂膜剂均能降低猕猴桃失重率并减少腐烂的发生,经涂膜剂T2处理的猕猴桃比T1和T3组对猕猴桃的失重率的控制更优,且经涂膜剂T2处理的猕猴桃在储存过程中出现腐烂的情况最少。结论:CTS涂膜剂可以延长猕猴桃存储时间,增强保鲜效果,添加了乳酸钙的涂膜剂保鲜效果较好,可能与乳酸钙有一定抑菌作用有关。
Objective: To look for recipe of chitosan(CTS) balm with better preservation effect to kiwifruit.Methods: Three different film-protection eagents were prepared with CTS.The decay index number,weight loss of kiwifruits coated were investigated under refrigeration condition during storage.The bacteria-inhibitory effects of different coating agent were studied.Results: The decay situation decreased,and the weight loss rates were lower when kiwifruits were treated with the coating agents.The 3 coating agents tested all showed certain antibacterial effects.Conclusions: CTS coating agents can extend the storage time of kiwifruits,and enhance the preservation effects.
